Festive Salad with Bulgur, Mandarin and Cashews

Ingredients:
For the salad:
1 pack (500 g) bulgur, soaked tarry in a lot of water and well drained
2 fresh green onions, the white part and a little of the light green, finely chopped (you can put more if you want)
6 tbsp. Parsley finely chopped (we measure it after cutting it)
3/4 tbl. Orange zest (1-2 oranges)
3/4 cup blanched currant
1 / 2 cups cashews, roasted and salted
1/2 kilo of mandarin, cleaned and each slice cut in the middle
For dressing:
1/2 cup of olive oil
1/2 cup fresh orange juice
3 tbsp. fresh lemon juice
3 tbsp. honey
1.5 tbsp. mild mustard
1 tbsp. cumin
2 1/4 tsp. cinnamon
2 1/4 tsp. salt
3/4 tsp. freshly ground pepper
